Delicious Mango Chicken Recipe: Perfect for a Summer Dinner

Summer is the perfect time to enjoy fresh and fruity recipes, and this mango chicken dish is no exception. This recipe is easy to make, and it's a perfect balance of tangy and spicy flavours. The juicy and succulent chicken breast is marinated with a delicious blend of yogurt, cilantro, lime juice, and cayenne pepper, which adds a burst of flavours to the dish. The best part is the sweet and juicy mango sauce that gives the dish a tropical twist.

Prep Time: 10 Minutes

Cooking Time: Marinate for 1 hour; Cooking 30 Minutes

Serves 4

Ingredients:

2 whole skinless boneless chicken breasts, butterflied

8 oz plain yoghurt

1 1/4 cup cilantro finely chopped

1/2 cup fresh lime juice

Dash of cayenne pepper

I clove of garlic minced

1 large ripe mango, peeled, finely diced

Method:

Preheat the oven to 190°C / 170° Fan / 375°F / Gas Mark 5.

To butterfly a chicken breast, lay it flat on a cutting board with your hand on top of it. Then, using a sharp knife, make a horizontal cut on the thicker side of the breast, slicing through the middle of the breast but not all the way through the other side. Open up the breast like a book and it's ready to be cooked.

Marinate chicken breast in a mixture of yogurt, cilantro, lime juice, cayenne pepper, and garlic for at least an hour.

Combine 1/4 cup yogurt, 1/4 cup of cilantro, half of the lime juice, cayenne pepper, and garlic. Marinate chicken breast in the mixture for at least an hour.

While the chicken is marinating, use a blender to puree together the remaining yogurt, two-thirds of the cubed mango, half a teaspoon of lime juice, and one cup of cilantro.

To bake chicken, you can use a glass baking dish and cook it for 25-30 minutes.

Place the chicken on serving plates, pour the sauce over them, and then sprinkle mango on top. Serve extra sauce on the side.

To add more flavour to your dish, decorate it with additional cilantro and lime. After that, give it a taste and adjust the seasoning according to your preference.

Additional Notes:

This mango chicken recipe is perfect for a summer dinner with family or friends. The juicy and flavourful chicken breast is perfectly complemented by the sweet and tangy mango sauce. You can serve it with a side salad or some rice to make it a complete meal. This recipe serves four, so you can easily double or triple the recipe if you're serving a larger crowd.

If you're looking to change up this recipe, you could try swapping out the chicken for a vegetarian option such as tofu or tempeh. You could also experiment with different fruits for the sauce, such as pineapple or papaya, to give the dish a different twist. Additionally, you could add some vegetables to the dish, such as avocado, red bell peppers or snap peas, to make it more colourful and nutritious. Finally, if you prefer a spicier dish, you could increase the amount of cayenne pepper or add some red pepper flakes to the marinade.

In conclusion, this mango chicken recipe is a must-try this summer. It's easy to make, delicious, and perfect for a summer dinner. So, give it a try and enjoy the tropical flavours at home.
