Avocado and Tomato Salad

Serves 6
Ingredients:
2 large tomatoes diced
1 cucumber sliced and quartered
2 avocados diced
1 small red onion dice
2 tbsp. fresh cilantro chopped (coriander)
2 whole limes (fresh lime juice)
1 tbsp extra virgin olive oil
1 pinch salt (to taste)
Method:
Chop tomatoes and cucumber, peel and dice avocados and red onion, and wash and chop cilantro.
Combine the tomatoes, cucumber, avocados, red onion, and cilantro in a serving bowl.
Squeeze lime juice over the top and drizzle with extra virgin olive oil. Gently toss.
Taste and add salt as needed.

To enhance the flavours of this salad, you could consider adding some olives, crumbled feta cheese or a sprinkle of toasted pine nuts for a savoury twist.
