Serving Size

10 servings

Ingredients:

2-3 cups cooked or canned kidney beans

1/4 cup water

3 tbsps. rice vinegar

2 cloves garlic

3 tbsps. olive oil

1 tbsp. flax seed oil (optional, use olive oil as substitiute)

1/2 tsp. sea salt

1/4 cup chopped coriander

1/4 cup chopped spring onions

Lemon Juice (optional)

Method:

To make the dip, start by combining 2 cups of beans, water, vinegar, garlic, oils and salt in a food processor or blender.

Process the mixture until it's smooth and creamy. If you prefer a thicker dip, add the extra cup of beans 1/4 cup at a time until the desired consistency is reached.

Transfer the dip to a bowl.

Add salt, coriander, and spring onions, and mix with a spoon.

Taste the dip and adjust the seasonings as necessary.

Serve with cut-up veggies or chips.

Additional Notes:

Add cumin, chili powder or paprika to this dish for a little extra spice.

Our love for photography started on our travels. We wanted to capture images of the areas we travelled to both for our own records and for our family back at home. Our Family

Family is everything to me! We have a family of four boys where the age difference between the youngest and the eldest is 18 years. Two of our sons are also Gluten Free and Dairy Free. Emma is a Health Coach who specialises in helping individuals and families achieve their health and wellness goals. Ian runs his own business which began developing a Race Timer for diecast model cars.
