Vegan Creamy Asparagus Soup

I recently made a vegan creamy asparagus soup and it turned out to be absolutely delicious!

To make the soup, I started by sautéing some chopped onions and garlic in a pot with a little bit of olive oil.

Then, I added chopped asparagus and vegetable broth to the pot and let it simmer until the asparagus was tender. Once the asparagus was cooked, I used a blender to puree the soup until it was smooth and creamy.

To make it even creamier, I added some coconut milk and a little bit of nutritional yeast for some added flavour.

I also seasoned the soup with some salt, pepper, and a pinch of cayenne pepper for some heat.

The end result was a rich and flavourful soup that was perfect for a chilly evening.

It was so good that I even went back for seconds!

I would highly recommend this recipe to anyone looking for a delicious and healthy vegan soup option.    

Prep Time: 15 Minutes

Cooking Time: 50 Minutes

Serves: 4 to 5 servings

Ingredients:

2 bunches asparagus

1 large onion

1 clove of garlic (optional)

5 stalks celery

3 cups vegetable stock (organic, homemade, and/or boxed)

1/4 cup of coconut milk (optional)

1/4 cup chopped thyme

3 tbsps. olive oil

Salt and pepper to taste

1/4 cup Coconut Milk (optional)

1 tsp. nutritional yeast (optional)

Pinch of cayenne pepper (optional)

Method:

First, peel and dice the onion.

Then, bring olive oil to medium heat in a large pot and add the onion along with a clove of chopped garlic.

Cook for about five minutes or until it becomes caramelized.

Meanwhile, wash the celery and asparagus and pat them dry. After that, chop them into ¼-inch pieces.

Add the celery and asparagus to the pot and cook for several more minutes.

Sprinkle some salt and pepper and add thyme.

Mix everything well and then pour in the vegetable stock.

Bring to a boil and then reduce the heat and let it simmer for about 30 minutes.

After that, transfer the mixture to a blender or food processor and blend on high until it becomes creamy.

Finally, garnish with some thyme and enjoy your delicious soup!

Additional Notes:

You can add other vegetables or flavours to this soup should you wish. The optional elements are whether you like the taste of these items and the suggested quantities are to our liking and can be adjusted.
