The humble chia seed is as versatile as it is nutritious, with endless potential for where you use them and what you mix them into! With fibrous benefits and packed full of protein, there’s no way that chia seeds can’t be a superfood!
Such a simple recipe which I was reluctant to make at first, but it is superb! Change it about and make it your own. Here is a recipe for chia seed pudding.
Easy Chia Seed Pudding:
2 cups coconut milk
1/2 cup Chia Seeds
1/2 teaspoon vanilla extract
1/4 cup (or less) maple syrup (or sub any sweetener)
Optional: 1/4 teaspoon cinnamon powder
Optional: Blueberries for the top
You can make this, and it will keep in the refrigerator for up to 5 days. Another great reason to make it, as it makes breakfast or snack time simple!
