Ingredients:
2 cups Brussels sprouts
¼ cup dried cherries
¼ cup pine nuts
2 tbsps olive oil
Sea salt and pepper, to taste
Method:
Preheat the oven to 180°C / 160° Fan / 350°F / Gas Mark 4.
Bring 3 cups of water to a boil.
Trim the ends and wash the Brussels sprouts well.
Parboil the Brussels sprouts for 7–9 minutes or until fork-tender.
Transfer the parboiled Brussels sprouts to a large mixing bowl.
Toss the Brussels sprouts with olive oil, salt, and pepper until they are evenly coated.
Transfer the coated Brussels sprouts to a baking sheet, ensuring they are in a single layer, and roast for 15 minutes, or until they turn golden-brown.
While the Brussels sprouts are roasting, chop the dried cherries into small pieces and toast the pine nuts in a dry skillet over medium heat until they are golden brown and fragrant, stirring frequently to prevent burning.
Once the Brussels sprouts are done, transfer them to a serving dish, and sprinkle the toasted pine nuts and dried cherries over the top.
Gently toss everything to combine, and adjust the seasoning if needed.
